Bacon Cauliflower Salad


Yes, this has sugar and fat in it.  However, the recipe makes a large amount (best for holidays, potlucks, etc), and I have never met a kid who didn't love this.

Ingredients
  • 1 Head Cauliflower, chopped
  • 1 Head Iceberg Lettuce, torn to bitesize
  • 1 lb Bacon, cooked and chopped
  • 1 med onion, sliced to slivers
  • Parmesan cheese
  • 1 cup Hellmans Mayo
  • 1/4 cup Sugar
  • Fresh ground pepper
Instructions
  1. Layer ingredients in order: Lettuce, cauliflower, onion, bacon.
  2. Fold mayo and sugar together. Spread on top.
  3. Grate Parmesan cheese on top. Pepper to taste.
  4. Let sit in fridge 3-4 hours.
  5. Toss & serve.

Test Case: P.F. Chang's Lettuce Wraps


Original recipe at food.com by Lali.  If you want to change the serving size, that site has a great feature to adjust servings and thus ingredient quantities.  This is just my personal copy and clarification of the recipe.

Flavor: A+

Tidy to Eat: F | The sauce gets ALL OVER your hands as you eat this, but my "I hate messy and hard to eat things" husband found the flavor worth it.  Which is rare.

Stomach-Friendly: A | This is not paleo, as it contains white sugar (1/4 c.) and brown sugar (2 Tbsp), but it sat well with my husband who is fairly glucose-intolerant and has trouble with processed foods.  Also, we only used half the special sauce, which has the 1/4 cup of sugar, which means you can easily eat less sugar than the recipe includes.

Makes 2-3 servings. My husband and I easily finished this ourselves. Made it for dinner as a main dish, no sides.

Sweet Creamy Cole Slaw

Ingredients
  • 1/4 head (2-3 cups) cabbage, shredded
  • 1 carrot, grated
  • 2 Tbsp. chopped onion
  • 1 rib celery, sliced
  • 1/4 c. sweet pickle relish
  • 1/3-1/2 c. mayonnaise
  • 1 tsp. sugar
  • salt and pepper to taste 
Directions
  1. Toss vegetables together in large bowl.
  2. Add pickle, mayo and sugar.
  3. Mix, taste, and add salt and pepper, if needed.
Shortcut: Use bagged cole slaw mix for the cabbage and carrot.

My Mom's Note: I like my coleslaw creamy and sweet, so you may need to add more mayo or pickle relish . Be careful about the salt. The pickle relish and mayo are both salty. Taste before you salt.

A recipe from my mom and my favorite way to eat broccoli.

Custard Rhubarb Pie

Rhubarb is a weird vegetable.  A little sour, sometimes sharp, it reminds me of the way lemon works but looks like reddish celery.

You can peel the rhubarb or not, like celery.  Diced, it won't matter much either way.
